Recipe - Living Sea Bean

Seabean Salad

1/4cupsherry vinegar
1tblDijon mustard
3/4cupolive oil
4cupsorganic watercress, washed and spun dry
3poundsassorted heirloom tomatoes
Kosher salt and freshly ground petter
1poundsea beans
3tblbrunoise-cut red pepper

Combine vinegar and mustard in a medium bowl. Slowly whisk in olive oil until emulsified.
