Salsify (Oyster Plant)
Keep cold, 32-34°F.
Salsify blackens quickly when peeled so have a bowl of cold water, with lemon juice added, sitting by. Subtle flavors of nuts, artichoke and oyster can be detected. Do not overcook as it will become mushy. Enjoy braised, stewed, boiled or steamed. Salsify is good in cream sauce and creamy soups too!
