General information:

Thick, crunchy stalks lead to deep green, soft leaves. Bok Choy can be eaten raw, however, it is most often cooked briefly via a stir-fry method. This vegetable is of a mild cabbage flavor and is superb for soups and braising too. Good supply of vitamins A, C and calcium.
